Position Overview

The Food Technologist – Regulatory Affairs & Food Safety Compliance will be responsible for ensuring regulatory compliance and food safety standards across all food and beverage operations of ITC Hotels and its associated brands. The role will drive adherence to applicable food regulations, support regulatory approvals, strengthen compliance frameworks, and collaborate with cross-functional teams to ensure consistent implementation of food safety and labelling requirements across the organization.



Key Responsibilities

  • Monitor and interpret FSSAI regulations, notifications, advisories, and amendments
  • Drive Pan-India FSSAI compliances.
  • Review food labels, nutritional declarations, ingredient specifications, and menu compliances for ITC Hotels, Welcomhotel, Storii, Mementos and Fortune Hotels.
  • Work with Culinary, WelcomLab, Procurement, Quality, and Operations teams on compliance matters.
  • Develop compliance trackers, SOPs, and regulatory guidance notes.
  • Support new hotel openings with licensing and regulatory approvals.
  • Conduct periodic compliance reviews and recommend corrective and preventive actions to address regulatory gaps.
  • Maintain regulatory documentation and ensure timely renewal of applicable food licenses and approvals.
  • Support internal and external food safety audits by providing regulatory guidance and documentation.
  • Facilitate awareness sessions and training programs on food safety regulations and compliance requirements for relevant stakeholders.


Qualifications & Experience

  • Bachelor’s or Master’s degree in Food Technology, Food Science, Food Engineering, Microbiology, Biotechnology, or a related discipline.
  • 4–8 years of experience in regulatory affairs, food safety, quality assurance, or compliance within the food manufacturing, hospitality, FMCG, QSR, or food service industry.
  • Strong working knowledge of FSSAI regulations, food labelling requirements, licensing processes, and applicable Indian food safety standards.
  • Familiarity with food safety management systems such as HACCP, ISO 22000, and Good Manufacturing Practices (GMP) will be an advantage.
  • Excellent analytical, documentation, stakeholder management, and communication skills, with the ability to work collaboratively across cross-functional teams.
