Senior R&D Lead / FMCG / NPD / F&B Manufacturing | Gurugram

Role Overview

At Dameasy, we are building a dynamic and execution-focused R&D function to support a growing portfolio of food and beverage products across sauces, syrups, dressings, beverages, jams, mayonnaise, dips, spreads, and other emerging categories.

We are looking for a technically strong and hands-on Senior R&D Lead to drive formulation development, pilot trials, manufacturing scale-up, and cross-functional coordination across multiple product development projects.

This role combines practical formulation work with technical leadership and offers end-to-end exposure from concept development and bench trials to commercial manufacturing and product commercialization.

Key Responsibilities

Product Development and Formulation

• Lead formulation development and optimization across multiple food and beverage categories.
• Translate client and commercial requirements into scalable and manufacturable products.
• Work with stabilizers, emulsifiers, preservatives, flavor systems, and functional ingredients to optimize taste, texture, shelf life, and process compatibility.
• Conduct sensory evaluations, benchmarking, and product validation activities.

Pilot Trials and Manufacturing

• Oversee lab trials, pilot batches, and commercial production runs.
• Support scale-up from formulation stage to factory execution.
• Coordinate with Production, Packaging, Procurement, and QA teams during trials and manufacturing.
• Troubleshoot formulation, process, and product stability challenges.

Technical Documentation and Compliance

• Maintain formulation records, specifications, SOPs, and trial documentation.
• Support labeling compliance, nutritional information, and technical documentation requirements.
• Ensure formulations and processes align with applicable food safety and regulatory standards.

Quality Systems and Lab Trial Runs

• Conduct stability assessments, shelf-life evaluations, and product testing activities.
• Monitor technical parameters such as pH, brix, viscosity, texture, and emulsion stability.
• Support continuous improvement initiatives related to product consistency and manufacturing efficiency.

Operational and Data Management Support

• Support R&D project coordination, ERP systems, formulation trackers, and technical databases.
• Guide junior R&D team members during trials and development activities.
• Stay updated on ingredient innovations, market trends, and emerging product opportunities.

Preferred Candidate Profile

• 7–8 years of experience in Food R&D, FMCG, processed foods, or contract manufacturing.
• Strong understanding of food chemistry, shelf-life stabilization, ingredient functionality, and manufacturing scale-up.
• Experience with liquid, semi-solid, and emulsified food systems is preferred.
• Comfortable working across both laboratory and manufacturing environments.
• Strong problem-solving, documentation, and cross-functional coordination skills.
