About the Role
The F&B Controller is responsible for controlling, monitoring, and optimizing all Food & Beverage costs across outlets, banquets, and events, ensuring adherence to The Leela’s financial standards, internal controls, and profitability objectives.
Responsibilities
Cost Control & Financial Management
- Monitor and control food, beverage, and operating costs across all F&B outlets.
- Analyze daily, weekly, and monthly F&B cost reports, identifying variances and recommending corrective actions.
- Ensure accurate calculation of food cost %, beverage cost %, and gross profit margins.
- Review recipes, standard portion sizes, and menu engineering for cost efficiency.
Inventory & Stores Management
- Supervise receiving, storage, and issuing procedures in line with hotel SOPs.
- Conduct and reconcile monthly physical inventories for food, beverage, and operating supplies.
- Investigate inventory variances, wastage, breakages, and pilferage.
- Ensure proper valuation of stock and closing inventory for month-end reporting.
Purchasing & Vendor Coordination
- Coordinate with Purchase and Stores departments to ensure competitive pricing.
- Verify purchase orders, GRNs, supplier invoices, and credit notes for accuracy.
- Assist in rate comparisons for major F&B suppliers.
Budgeting & Forecasting
- Assist in preparation of forecasts.
- Track actual performance against budget and provide variance analysis.
- Support banquet and event costing to ensure targeted margins are achieved.
Compliance & Internal Controls
- Ensure compliance with The Leela Group policies, statutory requirements, and audit standards.
- Maintain strong internal controls to prevent revenue leakage and cost overruns.
Team Collaboration
- Work closely with Executive Chef, F&B Manager, Banquets, Stores, and Finance teams.
- Train operational teams on cost awareness, wastage control, and financial discipline.
Qualifications
- Bachelor’s degree in Commerce, Finance or Accounting
- 3–6 years of experience in F&B cost control or finance within a luxury hotel or large hospitality operation
- Strong knowledge of hotel accounting systems, inventory controls, and F&B operations
- Experience with ERP/POS systems (e.g., SUN, WINHMS, Oracle & Opera)
Required Skills
- Strong analytical and numerical skills

- Knowledge of luxury hotel F&B standards
- Effective communication and coordination skills
- High integrity and ability to maintain confidentiality
- Proficiency in MS Excel and financial reporting tools
