- Assists the Executive Chef in all food outlets.
- Maintains a budgeted food cost and labor cost.
- Assists with the development of all menus and creates food ideas.
- Maintains a superior food quality, proper storage and rotation of all food items.
- Gives direction, trains and develops kitchen supervisors and direct reports.
- Assures that all kitchen employees follow the proper dress code.
- Oversee the training of all kitchen employees.
- Maintains proper sanitation policies throughout department.
- Check all food outlets to ensure food is properly prepared and held at the proper temperature for serving.
- Oversee the food deliveries through receiving and F&B buyer.
- Participate in taste testing on all new products with the Executive Chef and
- Responsible for food service for all internal and external catering-banquet events held
- Demonstrates knowledge and enforce safety procedures to insure employee safety.
- Oversee the hiring of all food production employees.
- Responsible for immediately informing on-site IGC Agent on duty, Security and Supervisor on Duty of any Internal Control or State Regulation violations related to gaming activity of which you commit, witness or become aware; must report pursuant to company Self-Reporting Policy.
- Perform miscellaneous duties as assigned.
- Experience Required: Minimum 5 years experience as a Sous Chef. Also must be experienced in all phases of kitchen operations including, but not limited to
- Education Required: High school diploma or equivalent.
- Skills, Knowledge and/or Abilities Required: Able to wear sanitary gloves when
- Licenses, Certifications, Bonding, and/or Testing Required: Indiana Gaming
- Other Specialized Requirements: ServSafe certified or ACF/ affiliate, member.
