Job Description: Quality Manager (FMCG – Namkeen, Potato Chips, Kurkure & Bhujia)


Position: Quality Manager

Industry: FMCG (Namkeen & Snacks – Potato Chips, Kurkure/Extruded Snacks, Bhujia)

Location: [Hiisar]

Experience: Minimum 7–12 Years (Mandatory experience in Namkeen/Snacks Industry)

Qualification: B.Tech/M.Tech in Food Technology / Food Science / Microbiology or related field


Key Responsibilities:

  • Develop, implement, and maintain quality assurance and control systems across all product lines including potato chips, kurkure/extruded snacks, and namkeen bhujia.
  • Monitor complete production processes such as raw material inspection, mixing, extrusion, frying, seasoning, and packaging.
  • Ensure product consistency in taste, texture, crispiness, color, oil content, and shelf life.
  • Control and monitor critical parameters like frying temperature, oil quality (TPM/FFA), moisture levels, extrusion settings, and spice blending accuracy.
  • Ensure strict compliance with FSSAI, HACCP, ISO 22000, and GMP standards.
  • Conduct regular quality inspections and laboratory testing of raw materials (potatoes, besan, oil, spices) and finished products.
  • Identify quality issues, conduct root cause analysis, and implement corrective and preventive actions (CAPA).
  • Maintain high standards of hygiene and sanitation across production and storage areas.
  • Handle customer complaints related to product quality and ensure timely resolution.
  • Prepare and maintain all quality documentation, reports, and audit records.
  • Lead internal and external audits and ensure compliance with regulatory requirements.
  • Train and supervise quality and production teams on food safety, hygiene, and best practices.


Required Skills:

  • Strong hands-on experience in namkeen, potato chips, kurkure (extruded snacks), and bhujia production processes.
  • In-depth knowledge of frying technology, extrusion processes, seasoning systems, and oil management.
  • Expertise in food safety standards (FSSAI, HACCP, ISO 22000).
  • Strong analytical, problem-solving, and quality control skills.
  • Leadership and team management abilities.
  • Excellent documentation and reporting skills.


Eligibility Criteria:

  • Minimum 7–12 years of relevant experience in the namkeen/snacks industry (mandatory).
  • Proven experience in handling quality for potato chips, kurkure/extruded snacks, and bhujia.
  • Degree in Food Technology / Food Science / Microbiology or related field.


Other Requirements:

  • Ability to work in a fast-paced FMCG manufacturing environment.
  • Strong coordination with production, R&D, and procurement teams.
  • Detail-oriented with a focus on maintaining consistent product quality and food safety.


Note: Only candidates with hands-on experience in namkeen, potato chips, kurkure/extruded snacks, and bhujia manufacturing quality control will be considered.
